Imagine, if you will, going home after work and planning to prepare a meal in your kitchen. All pretty straightforward and something you have done hundreds, if not thousands of times. You know your way around your kitchen, you know exactly where everything is. In less than 30 minutes the room fills with the wonderful smell of food being prepared, not a moment is lost. But if someone were to rearrange everything in your kitchen before you made it home, you would be disoriented and frustrated within minutes. Nothing is where you expected it to be, it takes a lot more time to find what you need and where the cooking would normally be an enjoyable experience it has now turned into a slow and frustrating activity. Now, that is exactly what happens when the galley loading is not exactly right and exactly the same every time. Processes are much slower and the joy of performing these tasks is quickly disappearing. This affects the crew, the passengers, your image and, ultimately, your sales. Something easily prevented. Doing things right before we get to the aircraft instead of correcting all kinds of mistakes while we are in the air will improve overall performance. That is what we achieve by setting up the loading in such a way that both service provider (caterer) and crew know exactly what to do and where to find what they need.
Now, there are of course a lot of things to consider when developing an optimum loading. Limits such as maximum weights, centre of gravity and weight distribution, layout and flow within a catering unit (for instance, lemons and sugar are stored in different locations, so loading them together in one unit will cause logistical issues) but also service schedules during flight.
